Mr Wholegrain's Quick Mix

8 cups of Mr Wholegrain Wholewheat flour
4 tblsp of Baking Powder
1-1/3 cups of Powdered Milk
375g Cold Butter

Quick Mix is ready to use now or store away in refrigerator or deep freeze for later use.

Put all dry ingredients into a food processor and mix together

Chop Cold butter roughly into walnut size pieces

Add cold butter to dry ingredients in processor and whizz until flour mixture looks like fine bread crumbs.
If processed too long or the butter is soft, the mixture will compact and be heavy.

 

Scones

3 cups of Quick Mix
1 cup of Water

Bake at 230° for 11 minutes.

 

In a bowl combine the Quick Mix and water lightly. Mixture will be moist.

Turn onto a floured surface and fold dough into the centre with floured hands or a spatula, then turn dough over, leaving floured surface on top.

Brush surplus flour off, then press gently with palms of hands to a thickness of 1-1/2cm to 2cm.
Cut into rounds or squares and place on a greased tray.

 

Damper

Bake at 360° for 30 minutes.

Form dough into a round approximately 4-5cm high. Transfer to a greased and lightly floured tray.

 

Tea Cake

2½ cups of Quick Mix
½ cup of Brown Sugar
1 cup of Milk
1 egg
1 tsp vanilla

Bake at 180° for 40-45 minutes.

Put Quick Mix into a bowl

Blend together milk, sugar, egg and vanilla.

Add liquids to Quick Mix and mix well together.

Pour into a greased and lined 18cm square or round cake pan.

 

Variations

 

Coffee Cake

 

Sprinkle over the batter a mixture of:-
2 tsp of sugar
2tsp of coconut
1tsp cinnamon.

 

Chocolate Cake

 

Add to Quick Mix
1½ tblsp carob or cocoa
1tsp cinnamon

 

Apple Spice Cake

 

Add to Quick Mix:-
½ tsp of allspice
Fold in 1 apple (chopped) into batter

Rolled Oat Porridge

 

In a saucepan measure 1 cup of Mr Wholegrain Rolled Oats, pour over 1½ cups of boiling water. Stir and leave to stand for 5 minutes.

Add 1 cup of milk or soy milk and sea salt to taste (optional)

Bring the porridge to boil and simmer for 10-15 minutes. Stir to prevent sticking.

Soaking oats overnight results in a creamier porridge. Add an extra ½ cup of water when soaking.

 

Margaret's Oat and Honey Biscuits

 

1 cup of Mr Wholegrain Rolled Oats
1 cup of Mr Wholegrain Wholewheat Self Raising Flour
1 cup of Coconut
1 cup of Sultanas (optional)
155g Butter
